The baron of Barossa

Peter Lehmann founded one of the biggest wineries in Barossa but it is not because of the size that he is called the baron of Barossa, but because of how he founded the winery.

Back in late 1970, Peter Lehmann was working at Saltram where they bought grapes from some 150 independent grapegrowers. When Saltram decided not to do so anymore because of surplus, Peter realised that most of these growers’ livelihood was at stake. Therefore, instead of breaking the bad news to them, he resigned from Saltram, bought the grapes from the growers and made the wine with the breakaway team. In doing so, he saved the vineyards which would have otherwise been bulldozed. After 30 years, Peter Lehmann Wines is still working with these growers, most now in their third generations, and making everyday drinking to premium wine using their grapes. Peter, therefore, is highly regarded in Barossa and Australia for being the saviour of the Barossa vineyards.

Ian Hongell is the third generation chief winemaker at Peter Lehmann Wines, who has been with the winery since 1998 and was under the mentorship of Andrew Wigan, then second generation chief winemaker and one of the breakaway team members back in the 70s. Prior to joining Peter Lehmann, Ian has worked at Penfolds, California and France. During his first visit to Hong Kong recently, we discussed his winemaking philosophy and tasted a few of his gems over a delicious lunch.

Ian’s biggest frustration is generalisation. A lot of people think all Barossa wines are heavy, jammy and rounded but there are in fact many different styles depending on the winemakers and where the fruits come from. For him, he believes oak gives structure to wine but it should only be in the background, not in the wine as it will mask the sense of place. Therefore, he has cut down the use of new oak and oak ageing time. This is certainly reflected in the wine we tasted.

A fresh, crisp wine with intense lime and apple aromas, the wine was made in tank with no malolactic fermentation to highlight its freshness. Ian called this his cocktail wine they he enjoys in any hot afternoon. Portrait is Peter Lehmann mid-price range that showcases the true characters of the Barossa.

Masters Wigan Eden Valley Riesling 2011:
One of the Masters Collection series named after Andrew Wigan, the wine was made from grapes at the best and cool sites at Eden Valley, and only released after five years of bottle ageing. It is multi-layered with a hint of honey but none of the petrol note that is too often found in young Riesling from warm climate.

Masters Mentor Barossa Cabernet Sauvignon 2012:
Another wine from the Masters Collection with structure and finesse; The cool 2012 allowed the wine to develop elegant blackcurrant fragrance with a savoury notes on palate. Apparently, Barossa is actually considered as a relatively cool climate region in Australia. Hard to believe but then everything is relative.

Stonewell Shiraz 2012 and 1988:
This is the best Shiraz of the vintage and the best possible expression of the Barossa. Ian presented two vintages, 24 years apart, to show the longevity of the wine. The 2012 was still tight but has a great depth while the 1988 was generous and opulent.

Ian is proud of the evolution of the wines over the years even under the challenge of climate change. By tackling the issue through vineyard management, picking grapes earlier and adjusting winemaking techniques, he is able to make wines with bright fruits and freshness rather than heavy jammy monsters.

Légende, everyday wine with a hint of Lafite

Most of us know that Domaines Barons de Rothschild (Lafite) or the DBR Lafite Group, owns various chateaux and have investments in other countries in addition to Lafite. However, few of us are aware of the Légende, a range of Bordeaux appellation wines mainly for the on-trade market.

According to the group’s export director Michel Negrier, Lafite is an icon wine that wine lovers aspire to. With increasing interests in wine from the younger generation in the 90s, the group decided to create a wine that combines the elegance of Lafite and an accessible price point for these consumers.

First to decide is the name. It must be as easy to pronounce and remember as Lafite, and convey the message of tradition, modernity, history and terroir, and encourage discovery. Légende is the ideal name that lived up to the criteria.

The first vintage of Légende was 1995 and it was available in Hong Kong since 2002. We tried the full range of wine:

Légende Bordeaux Blanc 2015: a vibrant, easy drinking wine with no oak influence. The freshness of Sauvignon Blanc livens up the oiliness in food while the Semillon adds weight.

Légende Bordeaux Rouge 2015: a Cabernet Sauvignon dominated wine that focuses on the purity of fruit, another easy drinking wine appeal to new drinkers.

Légende Médoc 2014: Same blend as the Bordeaux Rouge with 60% Cabernet Sauvignon and 40% Merlot, the wine certainly shows the Médoc influence with more structure.

Légende Saint-Emilion 2013: a well balanced wine with 95% Merlot. Velvety tannin, red fruits and a hint of spices.

Légende Pauillac 2012: a wine with structure and elegance. Apparently the grapes were from Lafite’s vineyards, no wonder the wine is a league above the rest of the range.

Michel said Légende is approachable, fun, easy to understand; about sharing with friends and discovering the Bordeaux terroir. Like NV champagne, it focuses on year on year consistency rather than highlighting vintage differences. In Michel’s word, Légende is the ladder to Lafite.

While most consumers in the world would go the mainstream way to try the entry level wine first before moving up ladder, Chinese consumers tend to jump right onto the top of the ladder skipping the basic and intermediate levels. In my view, this is a wrong approach to wine as the palate of new drinkers are not used to the structure and complexity of first growth wines, and therefore would not fully appreciate the subtlety of these great wines. We need to be patient and climb the ladder step by step in order to fully understand and thus enjoy the wine at all levels and price points.

With Légende now officially launched, I hope young Chinese consumers would first make connection with Lafite’s younger brother before setting their eyes on Lafite itself.

By the way, the Group also produces champagne in a ‘Lafite, Mouton and Baron Edmond de Rothschild’ family project under the name Champagne Barons de Rothschild. The bubbly certainly lived up to the reputation of the family.

More than just Pinot Grigio

ASC recently hosted an Italian Grand Tasting featuring seven wineries from Alto Adige to Sicily. Wines were diverse but I was surprised to find five Pinot Grigios from three wineries, and each has its own different style.

It’s true that a lot of Pinot Grigio being served as house wine is inoffensive but often bland. A well-made Pinot Grigio should be delicate with citrus, apple aromas and vibrant, while some serious ones, like those below, are concentrated with a depth of flavour.

Alois Lageder Porer Pinot Grigio: Single vineyard biodynamic wine from Alto Adige. 20% was barrel fermented while the rest in stainless steel tank. The wine has an uplifted aroma, a round mouthfeel and an integrated spice.

Masi Masianco Pinot Grigio: Blended with semi-dried native Verduzzo grapes, the wine is more aromatic and intense than an average Pinot Grigio, with fresh stone fruits and honey notes. Definitely a wine to serve with food rather than just gulping.

Banfi San Angelo Pinot Grigio: A 100% Pinot Grigio IGT wine from Montalcino, richer than the typical Pinot Grigio from northern Italy because of the warmer Tuscan sun but still retained the acidity. The minerality from the calcareous soil added the extra dimension. I tried it the other day with dim sum and it was perfect!

The Australian Wine Research Institute (AWRI) developed a PinotG Style Spectrum from crisp to luscious to differentiate them. It would be fun to have a PintoG dinner with wines from Italy to New Zealand and see how they fare and pair with food.

Dialogue with Banfi 

Castello Banfi, considered one of the top estates in Brunello, hosted a media lunch recently. It was an intimate event with around 10 wine writers, two ASC members, Paolo Fassina, Banfi’s Asia Manager, and Cristina Mariani-May, its co-CEO.

I had met Cristina briefly before and judging by her accent and her address I thought she was American, probably married into the family... but how wrong could I be! So it was nice that I could finally set the record right at the event. Cristina is in fact 100% Italian and the third generation owner co-managing the company with her first cousin. Yes, she lives in New York but so did her grandfather, who was a wine merchant, and founded the company Banfi. The company’s name was inspired by his aunt Teodolinda Banfi, a lady with a big personality who was the head of household at the Vatican and an expert on wine.

Longing to find its roots back in Italy, the family established Castello Banfi in Tuscany in 1978, gradually assembling a contiguous estate of 2,780 ha in Montalcino. Banfi is not the biggest estate in Montalcino but it does have the biggest single vineyard. Only about a third of the property is planted with vines, the rest is home to olive groves, fruit trees and woods. In addition, the family also owns the historic winery Bruzzone in Piedmont, now dedicated to producing sparkling wine.

Probably because of the American influence on discipline and the quest for perfection, John and Harry Mariani, the second generation, collaborated with the University of Milan on a Sangiovese Clonal Research project that eventually identified 15 clones out of 650 on the Banfi estate and the surrounding area that best represent the characteristics of the Sangiovese grape. Since 1992 Banfi’s new plantings of Sangiovese always have at least three or four of these 15 clones that are suitable for the specific soil and are complementary to each other.

The other thing that Cristina is proud of is the hybrid fermenters made of a combination of wood and stainless steel, which help produce the optimal wine: less stringent, softer and fleshier. The evidence? James Suckling rated Banfi’s 2010 as its best vintage.




The lunch turned out, it seemed to me, to be a two-way interview. While we were asking Cristina about the wine and the estate, she was quizzing the media at the table about the Hong Kong/China wine market with questions like why the Chinese prefer red wine, are drinking habits changing, what is the future of Italian wine in this part of the world, resulting in a lively and entertaining discussion. Although we all had different opinions, one thing for sure is that the recent consolidation resulting from the anti-corruption drive on the mainland is a positive thing in building a sustainable wine market in China. We should focus on the younger generation and instead of talking about wine in a technical and inaccessible way, we should help them to enjoy and welcome wine as part of their everyday lifestyle.

Going back to the wine, the welcome drink was Tener, a sparkling wine with an unusual blend of Sauvignon Blanc and Chardonnay using Méthode Charmat (fermentation in tank). Simple but pleasant, it was perfect both as an aperitif and to pair with the shrimp spring roll we had for lunch. I particularly like the San Angela, a 100% Pinot Grigio IGT wine from Montalcino. It is richer than the typical Pinot Grigio from northern Italy because of the warmer Tuscan sun. These two value-for-money wines would be an ideal introduction to new consumers especially alongside dim sum.

The Brunello di Montalcino 2010, with its black fruits accompanied by hints of earthiness and spices, is drinking well now, thanks to those hybrid wood/stainless-steel fermenters, while the single plot Brunello di Montalcino Poggio Alle Mura 2010, with more depth and concentration, will age beautifully.

Banfi is certainly not the artisan producer one may be looking for in Brunello and its wine may be made with the American market in mind, but so what as long as it is made well and with such a passionate owner behind it?

Love for Burgundy

Asked about their favourite wines, 90% of wine lovers, including myself, will name Burgundy—or more specifically, the Chardonnays and Pinot Noirs from Côte d’Or—as one of the top three. However these wines can be very confusing. So I was glad to have spent two afternoons in quick succession with experts, learning about what makes Burgundy tick.

Jasper Morris MW, Burgundy Director of Berry Bros & Rudd, and the author of ‘Inside Burgundy’, is well known for his expertise and passion for all things Burgundian. On his recent visit to Asia, we explored the three Ws in Côte d’Or— where, when and who —by tasting three pairs of wines, each pair having two Ws in common and one different. A similar exercise was conducted just a week later at the Altaya Wines annual ‘Passion for Pinot’ seminar, this time with owners from four family-run Burgundy wineries sharing their insights into the three Ws through 12 wines.

Burgundy wine is classified into four levels of quality: Regional appellations make up 52% of the total production, Village appellations 36% and Premier Crus (1er Crus) 10%. The remaining 2% belongs to the Grand Crus. The latter two levels are based on climats, small, precisely delineated plots of land that enjoy specific geological and climatic conditions. Côte d’Or, a long and narrow strip, is the heartland of Burgundy where the greatest wines are made. It is split into Côte de Nuits in the north and Côte de Beaune in the south. Some 30 of the 44 Village appellations and hundreds of climats are found here, as well as 28 of the 33 Grand Crus AOC.

The ‘Where’
The soil in Côte d’Or is predominantly limestone and marl, but each village has a different combination. Pascal and Charles Lachaux, a father and son team from Domaine Arnounx-Lachaux, explained that the different characters of their three reds—all from the same vintage of 2011 and made exactly the same way but from different villages—are due to the soil and location. Chambolle Musigny, further north with white soil, produces lighter and softer wine, while Vosne Romanée’s darker soil gives more structure and power to the wine. The third wine is from Nuits St Georges but it is not in the typical rich style thanks to the very white soil that results in smaller grapes. The wine is concentrated yet elegant.

Another interesting comparison was the two 1er Crus from Domaine Faiveley. Both were from Gevrey Chambertin, vintage 2012 and the same winemaking method. The ‘Clos des Issarts’ has a marked mineral palate with a smooth finish while the ‘Combe aux Moines’ is more tannic and muscular. The two climats are less than two kilometres from each other!

The ‘When’
‘When’ refers to vintage. According to Jasper, Burgundy is a crossroads for weather and is often at the cusp of two weather systems. No wonder every vintage in Burgundy is different. Frost and hail reduce crop yield while rain during ripening season affects quality. A hot summer gives powerful wine but too hot may result in imbalance between acidity and alcohol. A cool year, on the other hand, may produce wine that is too thin although diligent winemakers can still make some very elegant wine. Jasper’s philosophy is that vintages should not be classified as good or bad, but rather, an indication of when to drink the wine.

With Jasper, we compared the 2003 and 2000 reds from Domaine Jean Grivot Nuits-Georges 1er Cru ‘Roncieres’. The 2003 was rich and concentrated reflecting the particularly hot year, but it was still youthful with ripe dark fruits at 12 years of age. The 2000, although only three years older than the 2003, was much more advanced with dried fruits and forest floor bouquets. It was a more difficult vintage with too much rainfall close to harvest. Jasper described 2000 as a cheerful vintage for wine lovers—while it is not a long-lived vintage, the price is reasonable and the wine absolutely enjoyable now. The 2003, in contrast, still has at least another five years before its peak.

The ‘Who’
The notion of terroir is the interaction between soil, climate and people, so obviously winemakers play an important role in shaping the style of the wine. This was well demonstrated by BBR’s pair of 2008 Vosne-Romanèe 1er Cru ‘Les Beaux Monts’, Domaine Bruno Clavelier and Domaine Jean Grivot. The grapes of the first wine were picked slightly early and vinified with some stems. The wine displayed vibrant red fruits and floral notes yet with a fairly dense structure. The second wine had no stems used during winemaking but was aged in barrels for 18 months. It showed riper red fruits but with a leaner palate.

We also contrasted three reds at the Passion for Pinot session: Domaine de Montille Volnay 1er Cru ‘Les Mitans’ 2009, Domaine Faiveley Pommard 1er Cru ‘Les Rugiens’ 2012 and Bonneau du Martray Corton 2011. Although they were from different vineyards and vintages, we could still see the fingerprints of the different winemakers in the wine by the way they managed tannin and extraction.

These two tastings confirmed my belief that our choice of wine is personal. Wine is not about price or ratings. We all have different palates and stylistic preferences so it is only logical that we do not all prefer the same wine. As for vintage, well, we just have to buy every year and enjoy them at different times!

I also had the chance to taste the Louis Jadot 2013 en primeur organised by ASC Fine Wines. Louis Jadot is one of the larger producers in Burgundy with vineyards in nearly every Côte d’Or village. Thibault Gegey, its Deputy General Manager, explained that 2013 was a difficult year. Spring was wet and cold, resulting in poor flowering and thus a smaller crop. Summer finally arrived in June but a hailstorm in July devastated some vineyards between Meursault and Aloxe-Corton. September, the most important month for grape ripening, was excellent and balanced fruit with good potential began to develop, albeit in a much smaller crop. Unfortunately though, the weather turned progressively wetter and colder so those grapes harvested later had more rot than those harvested earlier.

Armed with knowledge of the three Ws, I would certainly not dismiss the 2013 vintage. It doesn’t taste like 2010 and probably doesn’t have the same ageing potential, but so what? I love its elegance and leaner style, and I’m sure I’m not the only one. When we sip a Burgundy, we know we are tasting the dedication of vinegrowers and wienmakers who care about their climats, and try to make the best possible Chardonnays and Pinot Noirs in every weather condition. Ne Oublie – Do Not Forget

“This wine dates from the time Andrew James Symington arrived in Portugal to work for W. & J. Graham’s in 1882. Our family has cherished these three barrels resting in the Graham’s Lodge because they embody the legacy he left us. We have bottled only one, into individually numbered, handcrafted decanters, presented by craftsmen from England, Scotland and Portugal: the three nations of our family’s origin. The remainder will pass into the guardianship of our children.”

A good wine always has a story behind it. Well, the story behind Ne Oublie is just extraordinary.

It all began in 1882 when Andrew James Symington, an 18-year old young man from Scotland, went to Portugal and worked for W &J Graham’s, a general trading firm and port producer. In 1891, Andrew James married Beatrice Atkinson, a lady of English-Portuguese descent whose family had been in the port business since 1652.

Andrew James and Beatrice, together with their three sons, focused on restoring port’s position in world markets after World War I. In 1920, Andrew James bought four casks of tawny port made in 1882 from a Douro farmer to commemorate the year of his arrival in Portugal. These casks were then transported by ox cart and boat from the Douro Valley to the cooler Vila Nova de Gaia where the wine could age gracefully. While the family continued to build the port business over the past century, these few barrels of 1882 wine rested silently in the port lodge carefully tended by generations of winemakers, cellar masters and coopers. Every year, a small percentage of wine was lost through evaporation—this is known as the angels’ share—and the original four casks were reduced to three.

To pay homage to Andrew James, the family has named this 1882 Single Harvest Tawny Port ‘Ne Oublie’, meaning Do Not Forget, after the original Graham family motto and the company where Andrew James started his life’s work. The name reflects the respect with which the family members regard their great-grandparents’ decision to commit themselves and their descendants to Portugal, to the Douro and to Port.

Now, four generations and 132 years after Andrew James landed in Portugal, the family has decided to bottle one cask of Ne Oublie. The remaining two casks, stamped and sealed, have been entrusted to the next generation who will decide their future in 2025 at the earliest.

But that is not the end of the story.

The family believes they owe their success to their Scottish, English and Portuguese heritage–Scottish for a rational and hard-working approach, English for common sense, and Portuguese for a flamboyant and romantic style. Therefore, they see it as only fitting to package these 656 bottles of Ne Oublie with the finest works of these three nations.

The wine has been bottled in individually numbered hand-made crystal decanters from Atlantis, a leading Portuguese glass manufacturer. Each one is decorated with three sterling silver bands weighing 250gm, moulded and engraved by renowned Scottish Silversmiths Hayward & Stott and carrying the mark of the Edinburgh Assay Office. Finally, the bottle is presented in a handcrafted, lockable leather box made by one of the world’s oldest luxury leather goods companies, Smythson of Bond Street in London. The wine, together with the packaging and presentation, sums up the passion and dedication of Andrew James and the family.

And how about the taste?

The taste is as incredible as the story. Paul Symington, present chairman of Symington Family Estates, remarked that it is hard to imagine how four or five generations ago, in the conditions of the time, they could have made a wine better than most being made today, probably without electricity for instance.

Because of the age, the wine is a dark brown colour with a greenish tinge at the rim. It is complex and rich with layers of aromas of marmalade, nuts, and herbs. Surprisingly fresh, the wine has a mellow mouth feel and an amazing length. Smelling and sipping the wine is like a glimpse into the family history.

Although 656 bottles were released, only 655 bottles will be available as the family is keeping bottle number 1. Asked if the family expects buyers to drink the wine, Euan Mackay, Sales Director of Symington Family Estates who was presenting the wine, said, “The wine is certainly a collector’s must-have but the family is expecting the wine to be drunk and enjoyed, especially among friends and family who appreciate the passage of time and family heritage.” Well, I have to agree that enjoying the wine is surely the tribute that Andrew James would have liked to see.

Only 25 bottles were allocated to Fine Vintage at HK$55,000/bottles. It is also available at Grahams’ Port Lodge at Oporto or via an online application list.

And if you miss this chance, there are still those two remaining barrels in waiting…but you will have to wait until at least 2025.

Louis Jadot, Burgundy en primeur 2013

2013 was a difficult year in Burgundy. Spring was wet and cold, resulting in poor flowering and thus a smaller crop. Summer finally arrived in June but a hailstorm in July devastated some vineyards between Meursault and Aloxe-Corton. September, the most important month for grape ripening, was excellent and balanced fruit with good potential began to develop, albeit in a much smaller crop. Unfortunately though, the weather turned progressively wetter and colder so those grapes harvested later had more rot than those harvested earlier.

But don’t simply dismiss the 2013 vintage. The overall production is definitely small but where vines were well-tended and grapes meticulously sorted, some truly elegant wines were made. I guess this is a big part of the excitement about wine grown in such variable climatic conditions. The wine is never the same every year but dedicated producers can always make something out of it. 2013 doesn’t taste like 2010 and probably doesn’t have the same ageing potential, but so what? I found a few more than decent wines at the recent Louis Jadot en primeur tasting:

Chablis ‘Preuses’ Grand Cru (white): Elegant with pronounced minerality. I always like Chablis and this one certainly doesn’t disappoint.

Corton-Charlemagne Grand Cru (white): Rich and intense with ageing potential

Volnay 1st Cru Clos de la Barre (red): Not sure if it would age well but no doubt enjoyable within the next three to five years.

Moulin-à-Vent Clos du Grand Carquelin (red): Surprisingly good, fleshy but supported by fresh acidity. No doubt will beat a lot of Burgundies.

Clos Vougeot Grand Cru (red): A masculine wine with depth, power and ageing potential.

With more than 230 ha of vines in the region, Louis Jadot is one of the largest producers in Burgundy. Thibault Gegey, Deputy General Manager, said that wines from all appellations are being made pretty much the same way so the differences we can taste in the wines are attributable to the terroir—soil, vineyard facing and weather conditions. We have all heard this refrain so many times but it is always fascinating to taste wines side by side and see it for yourself.

2013 Burgundies are unlikely be 100 point wines but, thanks to the winemakers, there will nevertheless be wine lovers, including myself, who appreciate their elegance and leaner style. Try some for yourself.

Wine for a cause

To be honest, I’m not a fan of the big heavy Californian wines but I decided to attend the recent Staglin tasting organised by ASC in the hope that it might change my mind.

Shari and Garen Staglin bought the Rutherford Bench estate in 1985 to realise their dream of making wine. They have since been joined by their children, Shannon, now the President, and Brandon, Director of Marketing and Communications.

Although the Staglin label is only about 30 years old, the estate itself has a rich viticultural heritage. Vines were first planted there in 1868. The property changed hands several times before the Staglins acquired it. Because of this, Shari and Garen see themselves as custodians of the land rather than owners. They are committed to preserve it for future generations of custodians by practising organic farming and, among other things, installing solar fields to reduce carbon footprint.

With only 51 acres (about 20 ha) of vines, Shari, who studied viticulture and enology after purchasing the vineyard, is devoted to producing only high quality wine. The family enlisted the help of Michel Rolland as consultant and followed his advice to practise green pruning in the vineyard and hand-sorting the berries in the winery. The location of the vineyard, at the base of the western slope of Mt St John, is also an essential element in the quality of the wine. The vines are shaded from the scorching sun in the afternoon, allowing the grapes to ripen slowly and retain their acidity.

The Staglins were also advised to develop two labels. The flagship Staglin Family Vineyard label comprises a Chardonnay, a Cabernet Sauvignon, a Bordeaux blend INEO and a Sangiovese to acknowledge Garen’s Italian heritage. The style is restrained yet still retains the energy of Napa. The second label, Salus, with only a Chardonnay and a Cabernet Sauvignon, has a more typical American style—bigger and more upfront.

Salus also has a mission. Shari and Garen are active supporters of mental health research because Brandon was diagnosed with schizophrenia (he has since recovered). One of the activities is the Music Festival for Brain Health, which takes place on the estate to raise funds for research and treatment programmes. All proceeds from the sale of Salus go to underwrite this festival. To date, the event has raised US$210 million for the cause. Definitely a meaningful project.

Staglin wines have a finesse that most Napa wines lack, especially the 2010 Estate Cabernet Sauvignon. It is rich but also elegant, with a fine structure. Although I have to admit that Napa wines are still not on the top of my drink list, hey, we all have different palates and it’s good that the whole world doesn’t all drink the same wine!

Does size matter? Comparing Tuscany Ruffino and Champagne Jacques Picard

Two tastings in a row: a guided tasting by Gabriele Tacconi, chief winemaker of Ruffino, a 130 year old family owned estate now under Constellation Wines, followed by a casual tasting with José Lievens, winemaker of third generation family-owned Grower Champagne Jacques Picard. After the tastings, I could’t help but ponder the conversations I had with these two winemakers.

Ruffino is one of the biggest wineries in Tuscany, owning seven estates comprising over 1,000 ha of land (of which 600 ha are under vine), and makes 18 wines in Tuscany and 6 outside Tuscany. It is the winery that received the first 10 Chianti DOCG seals (numbers 1-10). In 1927 it launched Riserva Ducale inspired by the Duke of Aosta, who became a prominent customer in 1890. Riserva Ducale is the only Italian wine that can legally use the word ‘Riserva’ in its name.

Jacques Picard, by contrast, owns 17 ha of land in three villages in Champagne and makes 8 wines with a total production of just 12,000 cases. The two sisters and their husbands (José is one of them) are hands on with the running of the business and they also look after some vines for Pol Roger.

Both Gabriele and José are amiable, of a similar age (I would guess mid 50s), have worked in their companies for about 15 years and were in Hong Kong for the first time. At first glance the similarities stop there as, after all, they make very different wines in two different countries and the operations differ massively in size. Yet in fact, their philosophies are fairly similar. Gabriele respects the style developed at Ruffino over the past 130 years, which emphasises elegance, traditional and drinkability. He is particularly passionate about Sangiovese and prefers using cement tanks and old casks, rather than new barriques, to preserve its characteristics. Ruffino does make a Super Tuscan (Modus Toscana IGT), because consumers are asking for it, but Gabriele makes sure the wine still bears the structural hallmarks of Sangiovese and that the Cabernet Sauvignon and Merlot only enhance the richness rather than overpowering the distinct Tuscan character.

José is also an aficionado of terroir. While most champagne houses only make vintage champagne in good years, José makes it, named Art de Vigne, every year as he reckons vintage champagne records the characteristics of each vintage, thereby serving as a picture of that vintage in years to come. We tasted three vintages—2002, 2003 and 2005—and they were indeed very different.

What I really like about these two gentlemen is their approach to wine. Though not the same, they ring the same bell. Gabriele believes wine is about experience and lifestyle and that one drinks wine to enjoy food and life. José? He says wine is about sharing—it is for friends, not collectors. Well, I couldn’t agree with them more. I hope consumers will be inspired by them and will drink wine for pleasure—with food and to share with friends—rather than for the labels.

So back to the question: does size matter? Some wine lovers dismiss big producers believing they only make ‘factory’ wine. Ruffino proves this is not necessarily the case. And Jacques Ricard demonstrates that small producers can be creative and resourceful. Gabriele and José are evidence that it is the people and their passion behind the wine that matter.

• Brut Nature NV: 70% reserve Chardonnay wine from 1998 to 2008 aged using the solera system, complex yet elegant
• Art de Vigne Millésime 2003: Biscuity and Marmite, a powerful wine. 2003 was a hot year.
• Art de Vigne Millésime 2002: Citrus, fresh and elegant, livelier than 2002 but unfortunately sold out
• Art de Vigne Millésime 2005: More buttery and vanilla, a rounder mouthfeel than 2003. This will be available in Hong Kong soon.

Marqués de Riscal - Tradition and Modernity

As much as he is proud of the wine, José Luis Muguiro, one of the owners of Marqués de Riscal, is also proud of the history and development of the estate, founded in 1858 and one of the oldest wineries in Rioja.

First the wine: the grapes come only from the Rioja Alavesa region, the best sub-zone in Rioja with vineyards at up to 800m altitude. Apart from the traditional grape varieties of Tempranillo, Graciano and Mazuelo, Marqués de Riscal has also planted Cabernet Sauvignon since 1858 and is one of the very few wineries that are allowed to have Cabernet Sauvignon in the blend. And it was precisely because the quality of its Cabernet Sauvignon so impressed Paul Pontallier, the then technical director and now managing director of Chateau Margaux, that in 1998 he agreed to become a consultant to Marqués de Riscal in charge of blending its top range. The Barón de Chirel 2006 we tasted, with 10% Cabernet Sauvignon in the blend and aged in French barriques, clearly has the footprint of a Bordeaux. It is, according to José, a wine that combines tradition and modernity.

In addition to the Frenchman, the estate has also secured the help of Frank P. Gehry, a renowned Canadian architect who designed the Guggenheim Museum in Bilbao, to design the ‘City of Wine’, a colossal project that combines tradition and innovation in the heartland of Rioja. The wavy titanium roof of pink, gold and silver houses a hotel and the oldest cellars of Marqués de Riscal. On this occasion, it was not Cabernet Sauvignon but a bottle of Marqués de Riscal 1929, the birth year of Frank (probably with some Cabernet in the blend), that charmed him to agree to take on the project.

And the next big plan? José has decided to call on all international help. Marqués de Riscal plans to invite 10 people, one from each of 10 different countries—the US, the UK, Japan, China, Hong Kong, to name a few—for a 3-day vertical tasting of Marqués de Riscal dating back to 1858 (the founding year). The tasting notes and comments of these experts will be made into a book commemorating the estate. The guests are not finalised yet apart from Japan’s. No doubt a few of our friends in Hong Kong and China will be jockeying for an invitation. I wonder who will be the lucky ones.

Marqués de Riscal is certainly far-sighted. It was the first to produce white wine in Rueda, and in 2011 held an auction of 100 vintages in Beijing. Like many big and long-established companies, it had its downs in the 1980s but has since transformed in the 21st century. Let’s hope it will continue to reinvent itself over the next 150 years.

We also had a vertical tasting of Marqués de Riscal Rioja Reserva 1997, 1998 and 1999. The 1998, coincidentally without any Cabernet Sauvignon in the blend, was voted by most as their favourite of the day.

Outside-the-box wine/food pairing

What a memorable dinner: pairing Chinese food with a whole range of Lustau sherries, from Manzanilla to PX (Pedro Ximénez)!

Sherry, long viewed as an out-of-fashion drink for old ladies, is making a comeback. Trendy sherry bars frequented by equally fashionable young consumers are sprouting in London, and sherry cocktails are gaining in popularity.

But it's not just an aperitif or dessert wine. Sherry is in fact popular with food, especially tapas in Spain, and rightly so. The 'discovery' of how well it pairs with Chinese cuisine is good news for winos and foodies alike. Most Chinese food is robust and its intense flavours can kill even some of the boldest red wines. Pairing wines with dishes perceived to be lighter, like seafood or chicken, can also sometimes be tricky. Sherry, on the other hand, is highly versatile, thanks to its many styles (see below). The fino style is light on the palate but its 15-16% alcohol balances well with deep fried dishes. Its savoury and tangy aromas compliment the food, unlike some very fruity wines whose opulent fruit actually clashes with it. The heavier oloroso style, 18-20% alcohol, is weighty enough to stand up to heavily braised dishes, while its sweeter style is perfect with the generally sweeter Shanghainese cuisine.

This reminded me of the port and food pairing experience. Like sherry, port is a sweet fortified wine but supported by high acidity. It stands up well against the powerful fatty Northern Chinese cuisine. Indeed, a tawny port is a fine complement to hairy crab. Ingnacio López de Carrizosa, the Export Director of Lustau, reckons the Amontillado style sherry, with its oxidised aromas not dissimilar to Chinese yellow wine, is also a perfect pairing with hairy crab, and I couldn’t agree more. Both the port and the sherry have a similar intensity to the crab. It is then up to the diner whether they prefer the sweeter tawny or the drier Amontillado. By the way, there is also a sweeter style Amontillado.

Thanks to Chef Tsang at Ming Court and Zachary the wine guy (Zachary left Langham Place already at the time of writing), the evening meal was creative yet true to its origins (ie. Chinese). My favourite pairings were:

Lustau Puerto Fino Sherry Reserva with deep fried scallops and crab meat. OK, this was slightly westernised as the crab meat was mixed with cheese, but still it was delicious. The wine was dancing on the palate after the food rather than being overpowered by it.

Lustau Dry Amontillado Los Arcos Reserva with crisp baby pigeon. Although I felt sorry for the tiny pigeon, its tender yet powerful flavour was the perfect complement to the nutty and smoky Amontillado.

Lustau VORS 30 year old Palo Cortado with beef fried rice and black truffle. The intense truffle provided a nice contrast against the sweet-bitterness of the wine.

So next time don’t be afraid to experiment with innovative food and wine matching ideas. From champagne to fortified wine, there is always a dish (or more) to match!

For those who are not familiar with the different styles of sherry, here is an overview:

Fino: Biological maturation with a layer of yeast on top called 'flor', which prevents the wine from oxidising, results in unique acetaldehyde aromas (tangy, salty, herby) at about 15% alcohol. Pale colour, fresh and does not improve in bottle (so consume as soon as possible).

Manzanilla: Fino sherry matured in the town of Sanlúcar de Barrameda, close to the Atlantic Ocean. The flor is thicker. It has a more intense tangy seaweed aroma and a more linear and lighter palate.

Oloroso: Oxidation maturation, ie. through contact with air. No flor layer. Brown colour with aromas of toffee, walnuts, prunes and spices. 18-20% alcohol. Can be dry or sweet.

Amontillado: Starts its life as Fino but is deliberately refortified to kill the flor and then continues to mature by oxidation, like Oloroso. Delicate aromas of both fino and oloroso. Can be dry or sweet.

Palo Cortado: Similar to Amontillado but the flor dies naturally rather than being killed deliberately. Similar characteristics to Amontillado but heavier as it is usually aged for a much longer time. A rare wine.

Pedro Ximénez: Opaque brown colour, intensely rich and sweet with 400-500 g/l sugar. Toffee, rancio, raisin, liquorice aromas.
