Burgundy meets Oregon

Burgundy and Oregon maybe a world apart but thanks to Jean-Nicolas Méo, owner of Domaine Méo-Camuzet in Burgundy and partner of Nicolas-Jay in Oregon, we were able to compare the Pinot Noirs from both sides of the Atlantic Ocean during his recent visit in town.

The family owned Domaine Méo-Camuzet is in Vosne-Romanée. In 1989, Jean-Nicolas joined his father after studying winemaking in Burgundy and a stint in the USA . With his father Jean Méo and well-respected Henri Jayer as his mentors, Jean-Nicolas experimented with different winemaking techniques and eventually developed his own style. He prefers de-stemming as opposed to whole bunch fermentation although he may include around 10% of stems during fermentation. Grapes are cold-soaked at around 15ºC for a few days prior to fermentation in cement or stainless-steel tanks at up to 30ºC, then warm-soak for a couple of days before pressing for more extraction. Depending on the fruit structure, each wine is aged with different wood regime. Today , the domaine produces 25 wines, including Grands Crus and Premiers Crus form the region.

We tasted four Pinots, all 2016 vintages from different villages in Cote de Nuits. True to Burgundy distinctive terroir, the wines show different characters. I like the delicate aromas and velvety structure of Fixin, a lesser-known small appellation with only 80ha under vines. In comparison, its neighbour Marsannay, the latest, bigger and more well-known appellation, produces wine with bright red fruits. Vosne-Romanée, with multi-layered aromas and freshness, is my favourite. The two plots of vineyard, next to the family house, are located at a higher altitude. In contrast, the wine from Morey Saint-Denis is sturdy with a darker fruits profile and a firm tannin. This is why Burgundy is unique - every appellation, no matter how close they are, has its own interpretation of Pinot Noir.

Jean-Nicolas met music producer Jay Boberg 30 years ago when he was in the US. Sharing the same philosophies about life, wine and music and especially the passion for Pinot Noir from Oregon, the pair eventually founded Nicolas-Jay in 2013. Jean-Nicolas was excited to take what he learnt from Burgundy to a new region with different climate and soil.

Unlike Burgundy, Oregon has a wet spring but dry summer. There are also differences in the soil, clones and working attitude. Burgundian is more intuitive whereas Oregonian is more technical. Jean-Nicolas was humble to admit that he also has to learn from his US colleagues.

At the moment, Nicolas-Jay only produces Pinot Noir. They source grapes from three vineyards sites in Willamette Valley in Oregon, make three single-vineyard wines and two blends using grapes from across the valley. Comparing to Burgundy, the Oregon wine is riper and more fruit-forward but there are still variations in different sites. The 2017 wine from the organic, dry farmed Nysa vineyard is generous with a softer tannin while the same vintage wine from the cooler, biodynamically farmed Momtazi vineyard is more focused, uplifted and structured. The 2017 Own-Rooted Pinot Noir was made from vines at least 30 years old and planted on their own roots. The wine has a more savoury note and it will be interesting to see how it develops. Jean-Nicolas also showed us three vintages of Willamette Valley Pinot Noir, 2017, 2016 and 2015 to compare the different vintage conditions and evolvement.

The only white wine we tried was Hautes-Côtes de Nuits ‘Clos Saint-Philibert’ 2016 from Domaine Méo-Camuzet, a very pleasant wine that Jean-Nicolas described as a cross between Chablis and Meursault. It possesses the freshness and mineral character of Chablis and at the same time, the ripe stone fruits aromas and richness of Meursault. Cotes de Nuits is a red wine region but this particular vineyard is at an altitude of 1,200ft with stony soil. Jean-Nicolas explained that Pinot Noir grown there will lack richness and volume, but the terroir is just perfect for a remarkable Chardonnay.

Running two wine estates thousands of kilometres apart and with harvests pretty much at the same time is not easy. Jean-Nicolas said he is lucky that he can rely on resident winemaker Tracy Kendall. He goes to Oregon around four times a year and definitely at harvest. Burgundy harvest is compact and shorter so he is able to catch the end of Oregon harvest, which spreads over a longer period of time.

The Making of Chryseia

Being a winemaker and having been taking part in more than ten harvests, I always love going back to vineyards, getting my hands dirty with grapes and juice and learning tricks from winemakers. Therefore I am taking one year off to make wine around the world: Douro (Portugal), Mosel (Germany), Tokaji (Hungary), Sussex (England), Stellenbosch and Elgin (South Africa), McLaren Vale (Australia) and New Zealand. I will be sharing my journey and experience here.

When mentioning Douro, most of lovers will think about Port. However, Douro has been making still wine long before Port was created. The success of Port in the past 200 years meant that still wine was somehow neglected. Some winemakers started producing red wine earnest 30 years but its rustic style was not what wine lovers preferred.

Therefore 20 years ago in1998 when the Symington family, who owns some of the finest port houses including Cockburn’s, Dow’s, Graham’s and Warre’s, toyed with the idea of making still red wine, they decided to seek outside help rather than doing it on its own. Bruno Prats, a long time friend because of the Primum Familiae Vini (Leading Wine Families) connection, has just sold his Chateau Cos D’Estournel at that time. Since Bruno has always considered the Douro as one of the greatest terroir because of the long agebility or Port wine, therefore when James Symington discussed with him about the project, the two clicked. The joint venture, Prats & Symington (P+S), was established in 1999. The idea was to make an elegant Bordeaux style wine using the Douro varieties. Symington would provide the grapes and Bruno the expertise.

The result? Chryseia 2001, its second vintage, made into the Top 100 in Wine Spectator 2003. Since then, the portfolio has expanded to include Post Scriptum and Prazo de Roriz. Post Scriptum, PS in short because it is the wine after Chryseia, was launched in 2002, a difficult year where the grapes were not good enough for Chryseia, hence it is also nick named Baby Chryseia. Prazo de Roriz was released in 2009 after the company purchased Quinta de Roriz, now home of Chryseia. The quinta, located at the south bank of the Douro River with a spectacular view of the river, has a history dating back to 1764 and even a chapel on site, complements Chryseia’s image and philosophy. Ten years on, Chryseia 2011 was ranked Number 3 in Wine Spectator Top 100 2014. It is considered one of the best still red wine from the Douro.

I had the opportunity to have participated at the Quinta de Roriz 2017 harvest, talked to Bruno Prats, Symington Chairman Paul, Symington Douro Still Winemaker Pedro Correia, and worked with Luis Coelho, the ‘man’ behind Chryseia, and his team. It was tough with 12 hours per day for three weeks but the experience and insight worth the effort.

So what are the secrets behind Chryseia?

The first and ultimate is vineyard and grape varieties selection. Quinta de Roriz and Quinta de Perdiz, both located in Cima Corgo (the middle part of the Douro Valley) but with different facings, provide the ingredients for the wine. The grapes are of Grade A quality if they were to be made into Port. Although there are other varieties in the vineyards, only Touriga Nacional and Touriga Franca (also known as Touriga Francesca) go into Chryseia as Bruno believes these are the varieties best suited to make outstanding wine in the Douro. Jancis Robinson compared them with Cabernet Sauvignon and Cabernet Franc.

Next is the fermentation process. Traditional  Douro red wine is made similar to Port with high extraction. The wine therefore is not as refined. To ensure Chryseia is elegant with ageing potential, fully ripen grapes are fermented under controlled temperature with a long post fermentation maceration period. In this case, only desirable phenols, rather than harsh tannins, are extracted. The wine, still in contact with skin, continues to evolve, developing the mid-palate and forming the structure. The important task of winemaker is to decide when to press. Tasting the wine everyday with Luis was a fascinating experience to witness the creation of the wine. It is like slow cooking, the chef needs to constantly taste the food to avoid over-cooking.

Wine destined for Chryseia at this stage, is then transferred to new barrel for ageing. Bruno explained the winemaking process of Chryseia up to this stage is pretty similar to making a first class Bordeaux. The only difference is the size of barrel. 400l barrels are used rather than the 225 Bordeaux barriques because the Douro grape varieties have more fruit expression compared to the Bordeaux counterpart. Too much oak will over-dominate the fruit character. Bruno summed up, Bordeaux wine emphasises structure and it must age before drinking, whereas Chryseia is more expressive that can be accessible when young but it can also age. Chryseia only has 17 years winemaking history but Bruno is confident that it can age for at least 20 years. His son, head of LVMH wine estate Jean Guillames, recently tried the first vintage Chryseia 2000 and remarked the wine was still very fresh. Incidentally, I also tasted Chryseia 2000 before I headed to the Douro and definitely it has not passed the peak yet.

The final key is blending. The team, led by Bruno and Charles, will taste all the barrels and select the final blend of Chryseia in winter and spring the following year. If the wine was not up to their standard, no Chryseia will be made, as in the case of vintage 2002. On the other hand, only limited quantity of Chryseia is made even in an exceptional year. The components that don’t make into Chryseia will be used for the second wine Post Scriptum. This means that the best years of Chryseia are also the best years for Post Scriptum.

While the above are all critical to making a great wine, I strongly feel, after working at the estate, that team effort is a major contributor. At Quinta de Roriz, a team of some 20 pickers select and only pick the best bunches under the blazing sun. When the grapes arrive at the cellar, another team of 10 people sort the grapes first by bunches and then by berries to get rid of leaves, dried grapes and unripe berries from going into the fermentation tanks. And of course there are also colleagues managing the fermentation tasks. As most of us work, eat and sleep at the quinta, we are being looked after by Ana and her mother, taking care of our meals and even laundry. Luis understands team spirit well.  At the beginning of harvest, he conducted a tasting to the team, explained the philosophy of the wine so we all knew our work does matter and treated us  to the harvest dinner. The best, however, was the end of vintage leitao (yummy home-roasted baby pig) party, cooked by Luis himself. Even though we worked 12 hours everyday, everyone was energetic and looked forward to the next picking day.


Bruno and the Symington Family have the vision to create the best still red wine in the Douro; Pedro and Luis execute the vision, and the team does the ‘work’. A great wine is not only made by one person alone, but the entire team.

Another look at New Zealand Pinot Noir

Marlborough Sauvignon Blanc is a crowd pleaser but doesn’t really excite. To me, most Central Otago Pinot Noirs fall in the same category. They are pleasant, well-made but predictable. In contrast, Pinot Noir from Marlborough and Martinborough are more interesting.

I was proofed wrong at the New Zealand Pinot Noir SPIT Workshop, presented by Liam Steevenson MW and organised by Meiburg Wine Media. We tasted 12 wines from six different regions in New Zealand and those from Central Otago were among the best in the flight. According to Liam, Central Otago winemakers are moving away from the typical bold and heavy Pinot Noir and opting for more gentle extraction and using less new oak.

Liam commented, ‘A lot of winemakers and wine lovers alike have soft spots for Pinot Noir. It is a grape with more soul and substances than other grape varieties, with a huge reflection of the place. Its delicate skin also makes it tricky to handle at the cellar. Winemakers have to extract the maximum colour and flavours but not too strong to extract the bitter tannin from the pips and stems.’

Partly because of its thin skin, Pinot Noir is temperamental and prone to climatic influence, therefore quality fluctuates a lot (just look at Burgundy!). However, it is the most consistent in New Zealand with more than 10 consecutive good vintages. Grown only in relative small areas, New Zealand Pinot Noirs bear the hallmark of purity, but they also display very different regional expression that Liam summed up as:

Marlborough: Limestone and volcanic soil, wine is bright, glossy, round with sweet fruit;
Martinborough: Heavy clay soil, wine is savoury and spicy with more width, a food wine (wineries also attributed this to the Dijon clone);
Central Otago: Continental climate, wine has more weight and structure with concentrated dark red fruits.

To be fair, I think New Zealand winemakers are getting out of the typical New Zealand mould. The flight of Marlborough Sauvignon Blanc I judged at 2016 CX HKIWSC was not the ‘McDonald’s’ Sauvignon Blanc I tasted a few years ago. I hope more winemakers are exploring and respecting the diversity of their terroir.

Kumeu River Hunting Hill Pinot Noir 2014, Auckland: Nice balance of fruits and spices. An elegant wine that rivals a lot of Burgundies. Available from wine’n’things.

Cono Sur Pinot Noir

Most of us take Chilean Pinot Noir for granted but little do we know that Pinot Noir is a relatively new discovery in Chile. Even more surprising is that Cono Sur, a young winery in Chile, is the biggest producer of Pinot Noir in the world!

Cono Sur is part of Concha y Toro. It was established in 1993 with the objective to produce wine that would be the new face of Chile, to convey the spirit of the New World. No wonder on its website, the slogan is ‘no family trees, no dusty bottles, only quality wine’. I think it’s a pretty witty way to differentiate themselves from those who emphasise on traditions.

Matías Ríos, Cono Sur’s Winemaking Manger, explained that most consumers’ perception of Chilean wine is jammy and high alcohol. ‘The new face of Chile’ is wine with drinkability. The wine should be juicy (fruity) but at the same time lively (with good acidity), and Chile has the unique geography and topography that allows them to plant vineyards in cool climate regions. Cono Sur has vineyards in all valleys from the extreme north in Limari to extreme south in Bio Bio, each vineyard planted with varieties that suit the terroir of the site. Combined this with the company’s three pillars: Innovation, Quality and Commitment to environment, Matías  believes Cono Sur is making wine that is expressive, innovative and unique to Chile.

Going back to Pinot Noir, the winery of Cono Sur was built on the Concha y Toro site in Colchagua Valley that has been planted with Pinot Noir since 1968. Naturally, Cono Sur vinified the grapes but using the same method as treating the more masculine Cabernet Sauvignon and Carmenere. The wine, according to Matías, was impossible to drink. The team then learnt making Pinot Noir in Burgundy and searched for the ideal sites for planting Pinot Noir. Cono Sur is the first winery producing a commercial Pinot Noir, and is now making six Pinot Noirs at all price ranges.

We tasted six wines with Matías, four from the 20 Barrels Limited Edition series and their two icon wines, Ocio and Silencio.

20 Barrels Limited Edition Pinot Noir 2014: Aged in 100% new oak, the wine is a darker shade than most Pinot Noir with intense fruits and spices. 85% of fruits came from Casablanca while the rest from next door San Antonio.

Cono Sur Ocio 2013: Ocio is the first ultra premium Pinot Noir according to Cono Sur. Similar style to the 20 Barrels but with more dimensions and complexity. Although the wine was aged in 100% new oak for 14 months, it was not overpowering because all the barrels were soaked in salt water for 10 days to remove the harsh aromas of new barrels. All grapes were from Casablanca.

20 Barrels Limited Edition Syrah 2013: Cool-climate characters Syrah with violets and spices alongside black fruits. Good acidity and a nice mouthfeel.

Nederburg’s entry to Hong Kong

Distell’s Nederburg is one of the largest premium wineries in South Africa which has been making wine since 1791. They also run the annual Nederburg auction, one of the world’s five major wine auctions, since 1975. Therefore, I am a little puzzled why we don’t see more Nederburg wine in Hong Kong (only a few SKUs of two lines are available here). Hopefully, we don’t need to wait for too long now. Nederburg’s new cellar master Andrea Freeborough, during her first Asian market visit recently, said they are planning (finally) to introduce their iconic wines, Manor House and Heritage Heroes, to Hong Kong.

Although Andrea is the new cellar master, she was not new to Nederburg. She was the white winemaker at Nederburg under then cellar master Razvan Macici in 2000, before being transferred to head Die Bergkelder, another wine brand of Distell, for 10 years. In 2015, she returned to Nederburg and took over from Razvan, who has been promoted to cellar master of Distell group.

We chatted with Andrea over a casual but absolutely delicious dinner. Over the conversation, I could see that Andrea is focused and disciplined. She decided to become a vinegrower at the age of 14 after seeing a photograph of a vineyard in a magazine. In subsequent holiday in Stellenbosch, she visited the university and cemented her career path, a decision that she never looked back.

Nederburg may be big, but Andreas said the team is like a family and she was glad to go full circle back to Nederburg, where there are still familiar faces from 10 years ago. She is also proud of the innovative attitude of the team. A new wine has to be agreed by the marketing department before it could be commercially produced, but her marketing colleagues are often open-minded and always support them. I am looking forward to tasting new Nederburg wine created by Andreas some time in future.

Andrea’s new wine may take a few years to materialise but hopefully, Nederburg’s Heritage Heroes range, a limited-edition premium range that celebrates the story of Nederburg heroes, would be in Hong Kong soon. The range consisted of five wines, each wine a tribute to a person that contributed to Nederburg heritage. Andrea brought four of the wine for us to try:

The Anchorman: a wooded Chenin Blanc that was named after Philippus Wolvaart, founder of Nederburg. The wine was partially fermented in stainless steel, barrels and old large vats, as well as a portion using carbonic maceration (have to say not a common practice) to add the freshness. It is versatile and went well with both the appetisers and the steak.

The Brew Master: a Bordeaux blend after Johann Graue, who bought Nederburg in 1937 and was the one to have introduced cold fermentation techniques, thanks to his experience working in a beer brewery in Germany. The wine is classic, complex and well-integrated with a good ageing potential.

The Young Airhawk: a wooded Sauvignon Blanc in remembrance of Arnold Graue, Johann’s son who was a talented winemaker supposed to succeeded his father but sadly died in a light aircraft crash at only 29. The wine is a classic Old-New World wine with ripe fruits yet restrained and elegant.

The Motorcycle Marvel: an intense and rich Rhone style blend to celebrate the legacy of cellar master Günter Brőzel until 1989, who created the first South African noble late harvest wine, Edelkeur, in 1975.

The Beautiful Lady: We didn’t try this one, a Gewürztraminer in memory of Ilse Graue, the wife of Johann, and mother of Arnold.


But while waiting for the Heritage Heroes line to land in Hong Kong, try Nederburg’s Ingenuity in the meantime, a truly innovative range that allows winemakers to create new blends. Its white is a blend of eight varieties while its Italian blend is a of Sangiovese, Barbera and Nebbiolo. Ingenuity is available from Watson’s Wine.

White pepper Syrah

The intense white pepper from the Craggy Range Syrah that I tasted in their cellar at Gimblett Gravels back in 2008 was so pronounced that I finally understood why Syrah is so often characterised as smelling of white pepper. Since then, I have always kept an eye out for Gimblett Gravels Syrahs and they have not disappointed.

This distinctive aroma can be attributed to the combination of the gravelly soil and the climate—free draining, warm days and cool nights. It is more akin to the Northern Rhone style than the full-bodied, jammy Shiraz from warmer regions. However, being New Zealand, the wine is more vibrant than Hermitage. To me, it is a perfect combination of climate, soil and winemaking technique.

At last year Gimblett Gravels Annual Vintage Selection tasting, Tony Bish, Chairman of  the Gimblett Gravels Winegowers Association, presented 12 wines—eight red blends and four Syrahs independently selected by Andrew Caillard MW—that best represented the vintage and the region. I was particularly impressed by the William Murdoch and Vidal Legacy Series. A couple of attendees remarked "... Gimblett Gravels is a fresh spring for me", and "...it was exciting to taste so many promising Syrahs from the region". I couldn’t agree more.

If anyone is scratching his head about how to identify white pepper in Syrah, get a Gimblett Gravels Syrah and you’ll never forget it. It is my favourite Syrah!

Once dismissed by sheep farmers as useless land, the Gimblett Gravels Wine Growing District is an 800ha vineyard area strictly determined by the gravelly soils laid down by the old Ngaruroro River in the Hawke’s Bay area of of New Zealand’s North Island. Believed to be the first designation for a winegrowing district outside Europe, it is now home to around 30 vineyards and is quickly gaining fame in the wine world.

Not to be outdone by the district's Syrahs are its Bordeaux blends. They have the structure of a cool climate region but again with a New World fruit forwardness that many have described as elegant and sophisticated. Although some of the wines at the tasting were too young to drink, they nevertheless had concentration and ageing potential. Asked if the wines were released too early, Tony agreed but said the wines have been kept for two years and most wineries cannot afford to store them for longer because they need the space and the cash for the new vintage. He hopes consumers can cellar the wines for a while to realise their full potential. Well, I suppose we have to be a little patient.

Aged Australian Cabernet Sauvignon

I recently had the pleasure to meet Wayne Stehbens who became Katnook Estate’s first winemaker in 1980 and remains so today. He guided us in a vertical tasting of the estate’s Cabernet Sauvignons. This year saw the release of the 2011 vintage, and the tasting was about the celebration of 30 years of Cabernets.

We tasted the 2011, 2010, 2002, 2000, 1999 and 1997. OK, not exactly ‘old’ by Europe standards, but when was the last time you tasted a 15 year-old Australian wine?

Katnook is situated in Coonawarra, the wine region famous for its terra rossa soil. Wayne believes Cabernet Sauvignon benefits from this red sandy clay loam on limestone and the surprisingly cool temperatures (highest 27ºC and average 19ºC in summer), resulting in a freshness and structure that Cabernet Sauvignon from warmer regions lacks.

The younger Cabs have the unmistakable mint and eucalyptus of Coonawarra, with fine tannins. I like the 2000 and 1999. The former has a good balance between ripe fruits and aged cedar notes, while the latter is of an elegant savoury character. The wine is nowhere near as complex as a fine Bordeaux but, at just over HK$200/bottle at Watson’s, I don’t think there is anything to complain about.

The same evening I was judging at The Sovereign Art Foundation French vs Australian blind tasting charity event, where both judges and guests scored 12 pairs of French and Australian wines of similar class and quality. While the judges gave more high scores to the French wines, the guests much preferred the Australian counterparts. An honest reflection of consumers’ palates?

All that sparkles is not Champagne


It’s that time of the year again when sales of bubbly are traditionally at their highest. Despite the doom and gloom of the economy, people, especially wine lovers, do like to indulge. However, enjoying bubbly does not need to break the bank. There are plenty of good quality sparkling wines outside Champagne that one can enjoy all year round.

Champagne is expensive for a few reasons. The first is production. Secondary fermentation, where the bubbles are created (called the Traditional Method), occurs in the same bottle. The wine is then aged on lees, a procedure called yeast autolysis, to develop the bready and biscuity notes. The longer this period is, the more pronounced the yeast autolysis characters. By law, non-vintage champagne has to be aged on lees for a minimum of 12 months and vintage champagne for at least 36 months (and often much longer). The second reason is climate. Champagne is in a marginal grape growing area where grapes, when fully ripen, can still retain high acidity—a prerequisite for good sparkling wine. And last but not least is marketing. Only sparkling wine produced within the Champagne region can be called Champagne, and this helps build the aura of exclusivity around it. A lot of sparkling wine outside Champagne is produced using the same Traditional Method but only costs a fraction of the price. Admittedly, a fine Champagne often has more finesse because of the marginal climate, complex blending and use of reserve wine, that set it apart from the rest, but one should not dismiss the other sparklers as lesser quality.

Crémant is another French sparkling wine outside Champagne. It is made by the traditional method, using whole bunch pressing with extraction limited to 100litres of juice from 150 kilograms of grapes—exactly the same stringent approach as in Champagne. The wine has to spend a minimum of nine months on lees and the grapes are generally the best from the region for making still wine (the permitted grapes for Champagne are Chardonnay, Pinot Meunier and Pinot Noir). Crémant de Loire is usually made from Chenin Blanc, or Pinot Noir; Crémant d’Alsace from Pinot Blanc, Pinot Gris, Pinot Noir and sometimes Riesling; Crémant Limoux, from the high altitude of Southern Languedoc, is made from Chenin Blanc and Chardonnay. Retail prices of Crémants are in the region of HK$200/bottle.

Most of us know Cava, a sparkling wine from Spain made in the traditional method with a minimum of nine months ageing on lees. Most Cava uses the indigenous grape varieties Xarel-lo, Parellada and Macabeo for whites, and Garnacha (Grenache) and Monastrel for rosés. Chardonnay and Pinot Noir are also permitted. Cava has distinctive earthy notes (some say rubbery) because of the Xarel-lo. Most Cava is not for ageing, hence its modest price of just over HK$100/bottle. Segura Viudas Reserva Heredad, with up to four years on lees, is a steal at less than HK$200/bottle (Watson’s).

The New World, including Australia, New Zealand and the US, also produce good quality sparkling wine using Champagne grape varieties in the traditional method. The best comes from cooler regions of Tasmania, the Adelaide Hills, Marlborough and Carneros, all displaying riper fruit characters but a less defined structure than Champagne, but there are nevertheless some top quality New World sparkling wines that can rival Champagne. Cap Classique from South Africa uses mainly Chardonnay, Pinot Noir and Chenin Blanc following the ‘champagne’ method. Serious Cap Classique producers are members of the Cap Classique Association and some are available in Hong Kong. And for something out of the mainstream, try Casa Valduga from Brazil (importer Wine Patio).

In my view, the two outstanding sparkling wines outside Champagne are English sparkling wine and Franciacorta DOCG from Italy. Both have the elegance and finesse of Champagne. Southern England has similar soil (chalk) to Champagne and climate change now enables England to ripen Champagne varieties reliably to make top quality sparkling wine. English sparkling wines are scooping awards in international competitions and have beaten Champagne in various blind tastings. The problem is quantity, as demand is outstripping supply. The few I have tried and like are Ridgeview and Camel Valley, both available in Hong Kong, plus Nyetimber and Bluebell (not yet in Hong Kong). Franciacorta, made with Chardonnay, Pinot Noir and Pinot Bianco, must be aged on lees for a minimum of 24 months for non-vintage and 36 months for vintage.

Sparkling wine can also be produced using the Charmat or Tank method, meaning secondary fermentation takes place in a pressurised tank rather than in bottle. Charmat method wine usually spends no or minimum time on lees so production cost is considerably reduced. This method is particularly suitable for aromatic grape varieties where wine reflects the varietal aromas rather then the yeast autolysis characters. These wines should be consumed young and fresh. The most popular in Hong Kong is the Italian Prosecco with fresh aromas of apple and melon. Priced at about HK$100+/bottle, it is definitely value for money, particularly the DOCG which is of better quality. Another is German Sekt, the best being made from Riesling, although some serious producers make it using the traditional method.

The rising stars among sparklers are Asti and Moscato d’Asti from Italy with only one fermentation. They are highly aromatic with lower alcohol (7-7.5% and 5%), medium sweetness and less pressure, popular among young consumers.

With so many choices and reasonable prices, bubblies do not need to be saved for celebrations only. Enjoy one now.

South Africa - Variety is in our Nature

I have always had a soft spot for South Africa. My first time there was in 1996. After a few weeks on the road driving around the canyons, Kruger and the Garden Route, we finally arrived at Stellenbosch where we spent a week tasting wine every day, duly starting at 9:00am when the cellar doors opened. Since then, I have been back to the Stellenbosch area five times and have had the privilege of doing vintages at Ashanti and Thelema.


Therefore it was great news that Wines of South Africa (WOSA), was finally organising a long overdue South African wine tasting in Hong Kong recently. 29 wines from Cap Classique and Chenin Blanc to Bordeaux blends and Pinotage were presented to packed audiences in two sessions: the trade masterclass with tutored tasting in the afternoon and a consumer walk-around tasting in the evening.

Bordeaux Gimblett Gravels blind tasting: who’s the winner?

At a recent judgement tasting organised by New Zealand's Gimblett Gravels Winegrowers Association in Hong Kong, Lisa Perrotti-Brown MW and Rod Easthope of Craggy Range led a blind tasting of Gimblett Gravels 2009 vintage against Bordeaux classed growths (including all five first growth) 2008 vintage. Some 30 experienced tasters including media from Asia (Hong Kong, China, Taiwan and Singapore), sommeliers, F&B directors and serious wine lovers were asked to rank their top eight wines out of the sixteen tasted. They were told in advance that the sixteen comprised eight Gimblett Gravels Bordeaux style wines and eight Bordeaux, and the labels were listed; so this was a blind tasting but not double-blind.

Martinborough Pinot Noir: Hidden treasure

Martinborough is the smallest wine region in New Zealand. The area under vine is about 3% of New Zealand’s total but wine production is only 1%. Although the journey is only a one hour drive from Wellington, it is a winding road up the mountain and down into the valley, with numerous twists and turns. No wonder Martinborough is easily overlooked by wine lovers.


If you think New Zealand Pinot Noir is Central Otago, think again. Most vines in Martinborough are Pinot Noir, although the quantity is nowhere near Central Otago’s. It all started in the late 1970s when a few brave souls followed the advice of a soil scientist, converted farmland into vineyards, and proved that Martinborough is indeed ideal for viticulture. Today there are some 58 growers in Martinborough. Sizes range from the smallest with less than 2 ha under vines, to the biggest (still fairly small compared to Marlborough) with 85ha.
